Booklovers Cookbook page 44


I noticed a recipe in the Chili Public Library Booklovers Cookbook submitted by Friends of the CPL Board Vice-President Sandy Roether. Walnut Crusted Chicken sounded delicious and it was just that. Last night for supper I made the dish and it was quite easy. What made it gourmet-like was the herbal cream cheese in the middle of the roll-up chicken breast and the toasted walnuts topping. I only had regular cream cheese in the refrigerator, but no problem as a search on the Internet gave me instructions on what herbs to add. Sandy recommends the book 'My Antonia' by Willa Cather.
