In the fashion of Julie and Julia, I decided to try out a dish from the Friends of the Chili Public Library Booklovers cookbook. The cookbook is for sale at $10 each. On Saturday, I turned my attention to page 35 of the cookbook and made Stuffed Eggplant Creole submitted by Deb Scorse. What a creative way to make eggplant in that the eggplant is cut in half and then the scooped out pulp is mixed with bacon, mushrooms, onion, green pepper, diced tomatoes, celery, and bread crumbs. Salt and pepper is added to taste. The mix is put back in the eggplant shells and is topped off with butter and cheddar cheese. It is done after baking for 20 minutes. It turned out delicious! I look forward to trying out the other recipes in the ccokbook. Deb recommends the book "Even Cowgirls Get the Blues" by Tom Robbins.
